About The Wine
The fruit for Favia’s Cerro Sur comes from a breathtaking, mountaintop block of Cabernet Franc planted nearly 40 years ago on the famed Rancho Chimiles, high in the Vaca Mountains.
Having produced this wine for more than a decade, Annie and Andy can confidently say that this is truly a wine from a very special terroir. The vines consistently produce wines of power, energy, balance and complexity.
A long maceration on the skins, minimal racking, barrel aging for 22 months in French oak, and bottling without filtration or fining, help to capture the many nuances of this special wine.
The 2015 vintage is bright and aromatic, with notes of red cherry, vanilla bean, flint, and a “walk through the herb garden.” It is mouthwatering and fresh on the palate, with a buoyant, ethereal sensation carrying all the way through with notes of Fernet and baking spices that linger for a full minute.
Favia Cerro Sur 2015
"Moving to the reds, the 2015 Cerro Sur checks in as 82% Cabernet Franc and the rest Cabernet Sauvignon aged 22 months in barrel. It has full-bodied notes of jammy blackberries, tobacco leaf, cassis, and spice as well as some classic Cabernet Franc forest floor and earth all developing with time in the glass. It’s balanced, beautifully textured, and elegant, with terrific depth of fruit."
