About The Wine
From one of the steepest hillside vineyards at the top of Chalk Hill Road in the southeast corner of Alexander Valley, this exquisite site creates incredibly gorgeous wines with delicate, soft tannins that melt into the juicy dark fruits of this powerful Cabernet.
All of the fruit is hand harvested and brought into the winery within hours of being picked. Everything is methodically and obsessively sorted. A cold soak of 4-7 days with minimal air incorporation starts the extraction and then cool fermentations with native yeast carry out the remaining. Air and temperature are controlled throughout the 10-15 day fermentation and extended maceration is determined lot-by-lot when Jesse walks the fine line of full extraction but still keeping an elegant and silky texture. Wines go through malolactic fermentation in barrel and are aged (sur-lees) for 22 months. Bottled unfined, unfiltered, and un-acidified.
Aperture Oliver Ranch Vineyard Cabernet Sauvignon 2019
"The 2019 Cabernet Sauvignon Oliver Ranch Vineyard is stunning and graceful. Medium to deep ruby in color, its aromas unfold slowly, Morello cherry, blueberries and violet segueing to layers of eucalyptus, grilled meats, dried herbs and graphite. The full-bodied palate is generous but not overripe, with chocolate-textured tannins, bursts of fresh acidity and a long finish replete with loads of fine, spicy accents from its maturation in 80% new French oak. Bottled in August of 2021, this stunner promises long development in the cellar. 387 cases were made."
