About The Wine

From one of the steepest hillside vineyards at the top of Chalk Hill Road in the southeast corner of Alexander Valley, this exquisite site creates incredibly gorgeous wines with delicate, soft tannins that melt into the juicy dark fruits of this powerful Cabernet.

All of the fruit is hand harvested and brought into the winery within hours of being picked. Everything is methodically and obsessively sorted. A cold soak of 4-7 days with minimal air incorporation starts the extraction and then cool fermentations with native yeast carry out the remaining. Air and temperature are controlled throughout the 10-15 day fermentation and extended maceration is determined lot-by-lot when Jesse walks the fine line of full extraction but still keeping an elegant and silky texture. Wines go through malolactic fermentation in barrel and are aged (sur-lees) for 22 months. Bottled unfined, unfiltered, and un-acidified.

Aperture Oliver Ranch Vineyard Cabernet Sauvignon 2018

  • "Deep ruby-purple, the 2018 Cabernet Sauvignon Oliver Ranch Vineyard slowly unfolds its wings to pure violet, cassis, tobacco leaves and pencil shavings, bright notes of mint chocolate, cedar and exotic spices. The palate is stunning, fanning out seamlessly from graphite to chocolate and intense, perfectly ripe blackcurrant fruit. The tannins are extraordinarily pixelated, the freshness is bright but integrated, and it has a Goldilocks ripeness! An extraordinary Cabernet Sauvignon from Alexander Valley. 725 cases were made."
