About The Wine
Displaying Howell Mountain’s signature concentration and complexity, QUINTVS is a rigorous barrel selection of the five distinct soil types found at ADAMVS. From the powdery gray volcanic ash to the iron-rich red clay Howell Mountain is most noted for, QUINTVS artfully represents the soil’s expression in the wine. The fruit was harvested from the oldest block of vines, at the highest elevation on the Estate, from 21st September to 2nd October, and spent an average of 25 days macerating on the skins. It was racked into 85% new French oak for 22 months prior to release.
The 2015 growing season provided for another impeccable vintage at ADAMVS. Low rainfall and a generally warm winter set the stage for early bud break at the Estate. Crop levels were lower than average due to dry conditions as we endured the fourth year of drought in a row. Low vigor in the vineyard produced small berries with concentrated flavours, and thus the 2015 wines are aromatic with a sauve texture that lends the wines great finesse and balance.

"Very deep garnet-purple colored, the 2015 Cabernet Sauvignon Quintvs (coming exclusively from the Howell Mountain Estate) is profoundly scented of beef drippings, licorice, dark chocolate and espresso with a crème de cassis, plum pudding and cedar chest core. The medium to full-bodied palate offers up surprising ripe, fine-grained tannins, beautifully framing the earthy/savory flavors and finishing with lingering earthy layers. 600 cases were made."
